The original PDO Calabrian spicy sausage is a product of excellence among the typical Calabrian products. This spicy sausage is obtained from a mixture of medium-cut minced meat from the shoulder and under-rib of the pig reared in Calabria. Flavoured with fennel and spicy Calabria chilli, they are stuffed into natural casings. Hand-woven and tied with natural twine, they are left to mature for at least 30 days.
