Perhaps the oldest cheese ever been produced, even before that of sheep’s and cow’s milk, pure goat cheese has been essential in human nutrition. In the last few years, it has been regaining the prestige lost, above all for its high digestibility and excellent nutritional qualities, containing more iron and calcium than any other dairy product based on cow’s milk. Pleasantly fresh at room temperature, a thin straw-white crust encloses an elastic structure with small holes.
Enjoy it in every moment of the day, alone to discover every nuance or for a tasty snack, with toasted fresh bread, or mix it in fun appetizers with the addition of croutons and seasonal vegetables. Combine it with white wine or with a cold beer.
