The traditional balsamic vinegar is extracted from the barrels after a minimum aging process of 12 years. After being tried by expert tasters, it is classified according to different stamps: lobster and gold. The ranking is determined on strict criteria fixed by a policy document: visual characteristics, smell and taste. Even more aromatic and rich of sensations, that only the slow passing of time can give to it. Its wide bouquet comes from a long aging in barrels that are rich in history and flavors. Minimum aging period of 25 years.
Its unique taste should be paired with sweet or salty food: raw or cooked fruits, ice cream, desserts. Great also by itself as an elixir.
