From the typical Lazio tradition, the Amatriciana is a pasta sauce made with guanciale pancetta fried in extra virgin olive oil, shaded with dry white wine, tomato sauce and a pinch of salt. Despite the presence of an original recipe formalized by the Municipality of Amatrice town in Lazio region, there are different versions of this recipe according to the towns where the dish is ordered.
