In the last few years, it has been regaining the prestige lost, above all for its high digestibility and excellent nutritional qualities, containing more iron and calcium than any other dairy product based on cow’s milk. Pleasantly fresh at room temperature, a thin straw-white crust encloses an elastic structure with small holes.
