Pancetta Piacentina comes from the fattiest cut of the pork, called “pancettone”. The manufacturing process consists of four phases. Initially meat undergoes a salting process, sprinkled all over with a mixture of salt and spices, following the traditional recipe. Then, the salted meat rest at cold temperatures for a certain period, to allow meat to absorb evenly salt and flavourings. After the rubbing phase, pancetta is rolled, tied and then left to dry in special rooms for 10-15 days. When the drying process is over, the curing period, which lasts up to 8-12 months depending on the weight, starts.
It is a very versatile type of cured meats, used to enhance the flavour of many dishes. It can be served on a platter, simply sliced. To ensure a "melting effect” in the mouth, we suggest cutting very thin slices and serving at room temperature.
