First of all, Prosciutto is a general term meaning ham. Crudo literally means "raw", and cotto literally means "cooked".

Prosciutto Cotto VS Prosciutto Crudo: Prosciutto Crudo is a cured but not cooked charcuterie, obtained from one thigh of pork where the skin is left on the top of the product. Prosciutto Cotto is obtained from the same pork cut with the skin and the fat layer left on the product, but then also cooked by slowly steaming it.

Prosciutto Cotto VS American Cooked Ham: Prosciutto cotto differs from an American cooked ham because injected with natural brine flavored with wild aromatic herbs, because it is not cured and smoked and there's no artificial sweetening.


How to recognize an Italian high-quality Prosciutto Cotto?

An Italian high quality Prosciutto Cotto should be:

  • round shaped with fat around the slice,
  • pale pink but bright coloured,
  • boneless but compact, with three sections, reflecting the muscle fibre structure.
  • If you can see these tree characteristics, you can be pretty sure that prosciutto cotto is high quality, obtained from one single high quality thighs instead of from multiple thighs compacted with gelatin.
